Fermentation:
14-18 days in small open bins with twice-daily manual punchdowns. Yeasts native, Lallemand BM-45 and BRL-97. Maximum fermentation temperature 27 degrees Celsius. Press fractions at 0.4 and 1.4 bars.
Ageing:
18 months in 30% new French oak.
Racked three times.
Finished Wine:
Bottled unfined and unfiltered on April 25th , 2006
Alcohol 13.5% by volume. TA 6.0 g/L, pH 3.62
